Deciding what to eat is usually an hour long conversation in our household. Who has that kind of time to waste?! Planning meals for the week is usually the route I take. Unfortunately, I didn't get to planning meals and making the grocery list this week. It's OK though, next week is a new week and a fresh start.
When this happens I turn to something simple, like a stir-fry. I always have chicken in the freezer and the rest is pretty simple; just gather any and all veggies you may have! I like to use the Kikkoman Teriyaki Marinade and Sauce for my stir-fry. This recipe is quick and simple. I hope this recipe makes your life easier on those hectic mommy days. - Cut 2-3 chicken breasts into chunks.
- Season with salt and pepper to taste. I used La Criolla Adobo this time.
- Coat your chicken with the marinade. I have used Tuscan Garden Teriyaki Marinade in the past as well, it's really delicious. (Available at Aldi)
- Refrigerate for at least 30 minutes.
- While that marinates, grab all your veggies. Wash and chop them up. I used asparagus, red peppers, green beans and carrots.
- Coat your pan, wok, or skillet with 1 tbs. of extra virgin olive oil. Turn your burner to medium heat.
- Once your pan is warm, place your chicken in the pan and cook until it's no longer pink.
- Last, add in all your veggies and stir them around so they are coated in the marinade as well. Note: You should only cook your veggies for about 5-7 minutes so they don't wilt. Crispy veggies taste much better!
