As a follow up to my last blog post "What's for dinner?", I am reporting that Day 1 of my planned dinners was successful!
It was such a relief not to worry about what I was making for the evening. Here is what I did on Sunday to prepare.
It was such a relief not to worry about what I was making for the evening. Here is what I did on Sunday to prepare.
- First, I looked through my refrigerator, pantry and cabinets to see what meats, sides and ingredients I already had.
- Then, I turned to my favorite site, Pinterest, and looked at my Board "Yummy Things" for recipes that involved the meats/fish, sides, and ingredients I already had. This didn't take long at all since I have 398 recipes pinned already!
- I then selected a recipe for each day of the week and wrote them down on my kitchen calendar.
- Lastly, I made a list of items I didn't have available for the recipes and took a trip to the grocery store.
Yesterday was day one and I made Grilled Salmon with Avocado Salsa. It was delicious and really easy to prep while Gianna was napping. I also learned this recipe is part of the Whole 30 Diet which was an extra bonus. I'm not on the diet but it was nice knowing it's a healthy meal. :)
Note: I substituted Chicken for Gianna's meal as this recipe does contain ancho chili powder. I thought that might be a little too spicy for her.)
I also added one of our favorite sides, Garlic Quinoa & Brown Rice. I get this at Costco and we all LOVE it. It's toddler approved too! It's very flavorful and cooks in the microwave in 90 seconds. Major time saver for me!
Today is "Taco Tuesday", of course! I will be making some Ground Turkey Tacos. Easy enough, right?
