Every day, and I mean every day, my husband and I ask one another, "What do you want to do for dinner?" And quite frankly, I am sick of it! Seriously, we do this all the time. It even turns into an argument at times because one of us will get annoyed with the other for being so indecisive. It's harmless, but I am over it.
I have tried doing meal prepping for the week and that didn't work either. My husband took my two page list to the grocery store, bought all the food and when he got back I was instantly overwhelmed by the amount of food we had! It took me 3 hours to prep only 2 meals. It was awful. So that has been scratched of the list of options for solving the question, "What's for dinner?"
As of next week I will be starting a new job that will allow me to work from home 100%. Woot! Woot! I am so excited! I have always said if I could work from home remotely, I would have more time to stay on top of things at home, including DINNER!
So, I started searching for some easy, tasty, no longer than 30 minute, meals. I tested one out this week and it was a success! I knew I had smoked turkey sausage at home and I always have pasta on hand; so I did a quick search and there it was. I made some minor modifications and it was still delicious! And it's 1 year old approved. Gianna ate it right up!(Note, there are chilies in the recipe so I recommend removing those to ease up the spiciness for the little one.)
I am sharing the recipe with you in hopes that it will bring some yummy goodness to your home. As well as, keep you and your hubby away from the dreaded dinner discussion.
My goal from here on out is to plan meals for the week based on what we already have in the pantry, freezer, etc. Then the remaining ingredients for my recipes, plus anything new, will get added to the grocery list. I also plan to track and document how well this works for me so I can share it with you too.

SPINACH & TURKEY SAUSAGE PASTA
Ingredients:
- 6 oz. Smoked Turkey Sausage
- 1 Tbs. Olive Oil
- 1 Shallot
- 1 Can diced tomato w/chilies
- 2 Cups chicken broth
- 8 oz. pasta
- 3 cups fresh spinach
- 1 Cup (4 oz.) Shredded Monterrey Jack cheese
- 1 Whole green onion
- Thinly slice the smoked sausage and add it to a large skillet with 1 tablespoon of olive oil. Saute the sausage over medium heat until it is nicely browned (about 5-7 minutes).
- Dice the shallot (or onion) and add it to the pan. Let it simmer for about 5 minutes. Then add your chicken broth and can of diced tomatoes and chilies. Stir it all together.
- Add the uncooked pasta to the pan and make sure it is covered completely under the liquid. Cover your pan and let it come to a boil. Then turn the heat down and let it continue to cook until the pasta is tender. While this is cooking, chop your green onion and your spinach.
- One the pasta is tender, begin adding in your spinach, one cup at a time. Keep the heat on while you do this.
- Now you can add in your shredded cheese, cover the pan to let it melt. One the cheese is melted, sprinkle the dish with your chopped green onion.
